High Protein Vanilla Custard

This simple, easy to make vanilla custard gets a sneaky protein boost, making it a tasty, high protein treat that can be enjoyed on its own or poured over a dessert.

Ingredients

1 ½ cups skim milk or 2% milk (Note 1), divided
30 g vanilla whey protein powder (Note 2)
2 tbsp cornflour
1 tbsp brown sugar
1 egg, lightly beaten
½ tsp vanilla extract
INGREDIENTS (Imperial)
1 ½ cups skim milk or 2% milk (Note 1)
1.10 oz vanilla whey protein powder (Note 2)
2 tbsp cornflour
1 tbsp brown sugar
1 egg, lightly beaten
½ tsp vanilla extract

Directions

Mix ΒΌ cup of milk with protein powder to make a smooth paste and set aside.

Whisk cornflour, sugar, egg and vanilla together in a saucepan until smooth. Add remaining milk and whisk again to combine.

Over a medium heat, frequently whisk the custard mixture until custard comes to a boil and becomes thick and creamy, approx 10 minutes.

Add a couple of dessert spoonfuls of hot custard to the protein powder mixture, whisk to combine. Repeat this step at least four more times to slowly increase the temperature of the protein powder mixture.

Add the tempered protein powder mixture to the custard and whisk to combine.

Divide the custard between 2 bowls or containers
